To accomplish that, Vince, Brandon, and much of Millie’s staff traveled to Naples, Italy, multiple times to study directly from the source.

To preserve authentic Neapolitan pizza-making traditions, many traditional methods used today continue to follow standards recognized by the Associazione Verace Pizza Napoletana (AVPN).

Naples is considered the birthplace of pizza, and the techniques used there are rooted in generations of culinary tradition. Since Millie’s imported its wood-fired oven directly from Naples, the founders believed it was important to learn how to properly use the oven and master authentic dough-making techniques.

During their time in Italy, the team learned:
